Start with making and baking your sourdough bread. When there is 10 minutes left, remove your bread and let cool for 15 minutes.
Cook your bacon however you like best.
When your bread has cooled, remove your brie from the packaging and using your bread knife, cut a circle into the top of your bread that is the shape of the cheese. Remove the top of the bread and place on the side.
With a knife, score the top of the brie in a checkered pattern and place into the open space of the bread.
Melt maple syrup and brown sugar in a saucepan on the stove over medium low heat for 2 -3 minutes. Chop your bacon into small pieces and add to the pan. Cook everything together for another 2 minutes until all the bacon is coated, then turn off the heat. (add nuts here if you like).
Top your brie with the maple bacon mixture, and carefully transfer your loaf to a Dutch oven. Place the lid on top to prevent the bacon from burning.
Preheat your oven to 400 and bake for 15 - 20 minutes until the cheese is nice and melty.
Serve warm with extra bread and crackers and enjoy!
