Caramelized Onion Baked Brie Sourdough

Bake your sourdough loaf as you normally would, leaving 10 minutes on the bake time. Remove from the oven and let cool slightly.
While your bread is baking, thinly slice your onions.
In a large skillet on the stove, melt your butter and add your onions. Cook over medium low heat for about 30 minutes, stirring occasionally until the onions are cooked down and caramelized.
When your bread is ready, use the round shape of the brie to cut a circle out of the top of the bread. Remove the top and middle to set aside for later.
Unwrap and score your brie in a diagonal pattern. Place your wheel of cheese into the empty pace in the center of your bread.
Top the brie with the cooked onions, and sprinkle with dried thyme.
Place your loaf on a parchment lined baking sheet and bake at 400 for 15 minutes until your brie is melty and your bread is crispy.
Let your bread cool slightly before cutting slices into the side of the bread and serving warm with extra bread from the top and crackers!
