Apple fritter bread is a delicious and comforting baked good that combines the flavors of classic apple fritters with the moist, tender texture of a sweet bread. Perfect for breakfast, brunch, or as an indulgent treat, this loaf is sure to become a favorite.
CRUMBLE TOPPING
Start by melting your coconut oil and letting it cool.
Whisk together all your dry ingredients in a small mixing bowl and set aside.
Peel and chop your apples, toss them in ¼ cup brown sugar and 1 tsp of cinnamon. (If you want to cook your apples before baking, melt these ingredients together in a saucepan on the stove with one tablespoon of butter)
In a large mixing bowl, whisk your eggs, oil, ½ cup of brown sugar, sourdough discard, and applesauce together there until there are no more streaks. Add your dry ingredients and mix until everything is fully combined.
Add your apple mixture to the batter and fold together.
Transfer your batter into a greased loaf pan.
Top with your fritter crumble mixture.
Crumble Mixture
Melt butter, brown sugar, and flour together until crumbly.
Preheat your oven to 375 degrees and bake for 45 - 50 minutes until it can pass the toothpick test.
Let cool slightly but serve warm!
